Cookies and Milk Party



My adorable friend and neighbor did a cookies and milk party for her little guy who was turning one. It was amazing! She put way more thought into every last detail than I ever have for a party. I guess I'm all about the treats at the party though.

I told her I would help her out and make the cupcakes for her. I made an Oreo cupcake which was a chocolate cupcake with an Oreo on the bottom. On top there was buttercream with oreo sprinkles and a mini Oreo. The other cupcake I made was a chocolate chip cupcake made with chocolate cake and a chocolate chip cookie on the bottom. On top there was buttercream with mini chocolate chips.

The party was FABULOUS and the cupcakes were darling.

Surprise Cookies



These cookies are pillow-y sweet little morsels of heaven. My daughter has been asking for a few days to make these together so I finally relented. I have been doing my very best to not eat sugar. You see, sugar really doesn't love me! I love it so very much, but it messes up my body and makes me feel horrible, but I HAD to take a bite so you could see the inside of the cookie, right? Well, trust me, these are soft, rich and chocolatey. You will need to include these in your arsenal of deliciousness.

Surprise Cookies

Makes about 32 cookies

1 3/4 cups flour
3/4 cup unsweetened cocoa powder
1/2 tsp. baking soda
1/2 tsp. salt
1 stick unsalted butter, softened
1 cup sugar
1 large egg
1/2 cup milk
1 tsp. vanilla extract
16 large marshmallows

Frosting
3 cups powdered sugar
6 Tbl. unsalted butter, softened
4 1/2 Tbl. unsweetened cocoa powder
6 Tbl. milk
1 tsp. vanilla extract

1. Preheat oven to 375 degrees. Sift flour, cocoa powder, baking soda, salt in a medium bowl. In a large bowl beat butter and sugar until fluffy, using a mixer. Then beat in egg, milk, and vanilla. Add flour mixture 1/2 cup at a time until incorporated.
2. Use small cookie scoop to make sure sizes are regular. Drop onto cookie sheet 2 inches apart. Bake until firm 8-10 minutes.
3. Meanwhile cut marshmallows in half crosswise. Make frosting: Put powdered sugar in a medium bowl. In a small sauce pan over medium-low heat, melt the butter with the cocoa stirring occasionally. Pour that mixture into the powdered sugar. Add the milk and vanilla and whisk.
4. When you remove the cookies from the oven quickly place the marshmallows cut side down on top of the cookies. Then place back into the oven for about 2 minutes.
5. Transfer to a wire rack and let them cool completely. Spread about 1 TBL. of frosting on each cookie completely covering the marshmallow.
